This is a different process to chocolate tempering and involves coating different centres in chocolate that are then glazed to a shine.

To create these products, we use a panning machine with a rotating drum that holds the ingredients being coated.

Chocolate Panning Process

Method:

  • As the drum spins, a separate canister holding melted chocolate sprays a fine mist of melted chocolate onto the ingredients.  
  • As the drum rotates it allows the ingredients to become evenly coated in chocolate.
  • The final step is to add a natural glaze of acacia gum that evens out the coated items and adds a beautiful gloss.
